Bilstein would be the easiest choice if you want to source it locally. I'm in Melbourne so I wouldn't know for sure, but there must be good Bilstein shop in QLD somewhere.
 
Otherwise I would try to get in contact with Jim2109 at the MR2OC forums. He works for Tritek Developments in the UK and he can make custom Ohlins for anything. Apart from knowing his stuff, he also knows MR2s very well so I would recommend him above anyone else.

Or, seeing as you are based in QLD, even try MCA suspension. They don't have anything off the shelf, but Murray is one of the best suspension builders around. As long as you are only after a basic 2 way adjustable coilover, you should walk away with a reasonable price.
 
I will swear by the compliance and build quality of these units, and Murray is a master of matching the spring rates to the dampening. I only have a small pic from a set we had spec'd for a customers car, and even with the 850/950lb springs we had fitted, the car rode like a standard car, only sharper.

Are the bilsteins coil avail in overs and are they ADR approved?? Where in Melbourne would you suggest? I have got parts from all over the world, Melbourne is just down the road!!!

MCA might be worth a look, but I would just like to point out that you don't need adjusters, and you shouldn't let it effect your buying decision. Once the damping is right, it's right. Doesn't need to be played with.
 
Also with any damper you buy, it must come with individual dyno plots for each unit.
If they are adjustable, get them plotted at each click of the adjuster as well. No point in having an adjuster if you don't know exactly what it does.
 
 
EDIT: the place in Melbourne for Bilsteins is Quadrant Suspensions. They can definitely supply you with good coilovers but I have no idea if they would be ADR approved. Best you give them a call:

As for ADR approved, do you mean legal for road use?? It varies from state to state, but technically in some states, having height adjustable suspension is defectable. With either people listed, they should be able to advise you.

I must say I am leaning towards tiens, they super high quality and offer great product .. Just the $3800 price is up there! Bilsteins don't make an aw11 item by the looks of the catalog !, any other suggestions?????

Why dont you speak to a suspension specialist (a good one that is - there should be at least one in every state), they should be able to recommend something suitable for the cars intended use.

Why do they need to be off-the-shelf? Get custom units made!
 
I can guarantee you that Teins are nowhere near as good as Bilsteins. And Ohlins are another step up again. I'd even go for those MCAs before looking at Teins.

Have a chat to some of the guys in car clubs involved in motor sport etc, they will probably one suspension place that has a great rep and know what they are talking about. 
 
In Perth there are 2 places that most people go to and they know what they are talking about, and have extensive experience etc.  Also a quality 4 wheel alignment can make a huge difference, regardless of suspension used.

You seem to be contradicting yourself a little... "just need to find someone who knows what they are doing in Brisbane", yet you have ordered parts from all over the world?

quadrant are a bilstein specialist, and they custom build a set of coilovers to suit your needs, selecting the damping characteristics based on your needs. An old workmate of mine had them custom build a set for the front of his hilux, and a few aw11's getting around have sets made by them. I also had ajps in adelaide make a set of custom bilstein coilovers for a ke20 i'm building with a mate. Mca has more experience in motorsport, and build everything in house. I suggested them as they are in the same state as you, and i can vouch for the quality. They do make more basic unit's than the 4 way adjustable units, they are the only ones i had pictures of. Do your research and weigh up your best options, as zerogk said, you have put a lot of time and research in building a quality setup, do the car justice and put some quality suspension in.
