(a bit late but anyway...)
Since I'm the only person in Aus who uses Steve Hoelscher's setup, figured I should add my 2c here.
If the car is only getting "occasional road use" then why not try the no-swaybar idea? Even though mine doesn't get driven much, I do drive it on the street and I've done long distances in it too. The ride is not fantastic but it's not as bad as you'd expect either.
If you do decide on this option, you'll be looking at spring rates around 12kg front and 8kg rear. That's what I have at the moment, but thinking about moving up to 15k/10k. You can scale it up and down depending on what sort of tyres you are using. Wider/grippier tyres equals higher spring rates, and as a general rule of thumb the front spring rate needs to be 150% of the rear spring rate.
Can't really give any recommendations for a conventional setup... just research what everyone else is doing and go with that.
