I dont think the gearing would make any real difference, but what happens to the ABS when only one axle has a significantly different diamater?
 
I know on gtr skylines, this causes the 4wd system to behave differently to normal, as the ecu thinks one of the axels is starting to slip due to different wheel speeds.

Many people disconnect the ABS for the track anyway.
 
There would be another positive benefit of better rear stability with the lower profile tyre.

One of the guys here Smokey (RIP) ran 225s all round on his race MR2, which was very successful.

This shows that wider (rear) doesn't automatically mean better. 
Staggered mainly for appearance value.
