Like many others, I found the center console area the best location for visibility.
Also, mountings that angle them slightly towards the driver make the gauges easier to read, by cutting down parallax error. 
 
I set up mine just below the center vents, and above the CD player rather than below, so as to keep them reasonably high.
Although it took a bit of work, I made the pod out of plumbing sockets glued together to take stock 50 mm gauges, but the center surround did need slight modification. 
One thing to check when mounting them in this location is reflection from the rear window making them hard to read during daylight.
I found that tilting them upwards slightly eliminated this.

It's a great solution and a perfect place, but is there a solution if you want/have a Double DIN GPS headunit? Also quite curious what those switches do where your ashtray was?

The ashtray switches are for aerial up down, and daytime running lights with leds to indicate whether they are on or off.
 
I have a fairly large separate GPS mounted on a separate bracket to the left of the gearlever.
Not quite a double din but it does the job, and is possibly easier to programme than a dash mounted one.
