Jake, maybe do the headlight adjustment at night with the car facing a wall or garage door.
Then you can see what is happening while you adjust.
Re steering:
With manual steering, as already mentioned there are many ways to make the steering lighter.
When maneuvering at slow speed such as parking, many people who have only ever driven cars with power steering don't know that you should not try to turn the wheel
unless the car is moving. What size front tyres do you have? The stock front tyres for SW20's were 195 wide. (195/50R14 or 195/55R15)
If you have wider than that the steering will be heavier.
I have also found that old tyres with hard rubber can make the steering heavier.
Also maybe pump up the front tyres another 2-4 PSI, which should make the steering lighter.
