Old Pacific Highway, AKA 'Old Pac':
The good part of the road starts just north of Berowra and it ends around Somersby. It runs adjacent to the F3/M1 freeway, crossing over or under it at various points.

Royal National Park, AKA 'RNP' or Natio/Nasho:
Begins as Farnell Avenue near Loftus. Most people stop at Stanwell Tops before turning back. The road has a bit of everything...tight corners, sweepers, uphills, downhills, and just a few straight sections around the halfway point. There are some annoying bumps in the road, but no big deal.

McCarrs Creek Road:
Turn off Mona Vale Road and away you go. It's a great drive when there aren't too many cyclists in the way.

Bobbin Head Road / Ku-Ring-Gai Chase Road:
Lots of fun corners, and the road is on a moderately inclined hill. If you want to go downhill then you should start at Asquith, or if you want to go uphill then you should start at Turramurra.

Putty Road:
I haven't done this yet but I intend to. It's a very long drive, but I've heard that it's fantastic with heaps of fun corners that are mostly close together.

Macquarie Pass National Park:
It's a long drive to get there in the first place, but it's worth it because some people think it's the best driving road ('reasonably' close to Sydney).

This goes out to Lithgow. It's quite a long drive, and most of the corners aren't close together, but it's a fun drive anyway.

Bobbin Head Road / Ku-Ring-Gai Chase Road Hell yeah! Probably my favourite one, but just watch out for the highway patrol (usually the blue holden or the undercover in a greeny/grey) as you get on the straight of bobbin head road :3

Old Pacific Highway is, in my opinion, hands down the best road in Sydney!!! As a motorbike rider as well I have spent many a day and night there 
 
I live in Mona Vale so have been doing McCarrs Creek Rd regularly my whole driving life, great road, been recently re-tarred. Just do it at an irregular time like night to avoid the cyclists. 
 
And finally I've done Putty Rd loop (Wilberforce - Broke - Wollombi - Old Pac) which takes about 7 hours, twice on my bike and it is about as good as it gets if you want to do a whole day trip and see some country side.
 
Natio was pretty good but it's just too far away from where I live, and when I did it I had a Forester in front of me doing 50 km/h :(

I have a document I will find for you. It was specified for Sydney but it includes many roads easily drivable from Sydney.
Me and a good deal of friend have a list of 60ish roads within 3 hours or Newcastle we drive, and many of then lay on the central coast.
Something fun to do with wisemans is to follow it all the way to the end of the putty road all as one big trip. We organised a huge 8 hour day out once doing that. Was magnificent

I just updated my post above (second from the top). 
I think this thread needs to be 'bumped' once in a while anyway, so that everyone is aware of some of the great roads just outside of Sydney.
