I'm currently about to abandon my GTST/GTR wheel combo purely because I cannot get a quality tire in 16" to fit those rims.

This. Simply too expensive or crap range. 17's were a good decision

Yeah you should be able to get 225's for the front and 245's for the rear. I used to have WEDS 16 inch wheels with 225's up front and 245's rear on an MR2 Gen1 and it drove really nice. With 17x8 WED's all around on the same car it would tramline a lot and felt crap, that's why I dropped down to 16's on it. On the Gen3 MR2's 17's seem fine up front.
Actually you could have gone 16's up front and 17's rear. Then you could run ADO8r's up front and rear. Like a 255 rear tyre and 225 front.

Okay I'll give you a  bit of a run through. It's a combination of you suspension, rim size, width and tyre size.
So with coilovers (tein others will vary) at the front 17x8 +35 will basically touch the springs by a few millimetres, its a very small amount of space you have to deal with. With 17x9 +35 on the rear they will fit perfectly pretty much and you should be able to run a 255 wide tyre with rolled rear guards and no rubbing.
I have two sets of wheels. My front are 17x7.5 +35, they fit without hitting anything and my rears are 18x9 +35 and they fit perfect. On my other rims I have 17x8 +28 front and 17x9 +35 rear and they fit perfect also.
If you run 17x8 +35 on the front with standard suspension they will fit without hitting the strut from the side of the rim, however height of the tyre becomes an issue so it doesn't hit the spring perch so you end up being limited to a tyre that needs to be stretched unless you bend the spring perch upward. On a 17x8 rim ideally you want to run a 235/40/17 tyre, however you will probably find you need to run a 215/40/17 up front to stop it hitting the spring perch that sits over the top of the tyre. With coilovers you don't have that issue but with a +35 the rim will hit the inner suspension. Also you may find that when turning the wheel it rubs the inner guard plastic. Depends on the bodykit you have.
Trying the house a 8inch wide front with 235/40/17's is very tricky, you need the perfect offset otherwise it will hit something or rub, for me with teins, 17x8 +28 is the perfect offset, as my 235's don't rub or hit anything. Different coilovers have different widths so it could be better or worse for clearance as its only millimetres you have to play with.

Checked out your picture - the fitment is basically perfect! But that sizing limits me so much to what I can get! Been trying to find a nice 17x8 +28 rim but no luck so far...
I'm thinking of going with the +35 offset for now and hope for the best when I do get Teins (5SGTE is saying he has no problems with Teins and +35 offset wheels) and in the worst case scenario go with the BC Racing coilovers (are they as good as Teins?)

They are awesome. I have no fitment issues with 17x8 +35 running teins. That's on a rays rim.

Where did you find a 17x8 +35 Rays rim?!
 

Yeah worst case if your wheels do it the suspension when you change to coilovers, you can just fit a spacer to push the wheels further out.

Sorry for the thread hijack but I'm going to try and change my order to 17s too. 16s are no good for MR2 tyre sizing unfortunately :(

Don't know why you're all so convinced there are no tyres left  in the correct SW20 profile for 16" rims. There's these for starters, which are rated really highly:

You can also get Toyo T1-R's in the right sizes if you know where to look. That's what I run and I've always been very happy with them.
 
There are other options beyond these too.
 
(hint: Demon Tweeks is your friend – and they get them to you even faster than local suppliers can get tyres in)

Yeah they seem to have the most rims available.
I know JDM Concept has heaps of different rims, but their website is actually quite hard to read and you have to order basically everything from Japan which takes roughly 2 months whereas Autotechnik has most of their rims in stock ready.
